The Meso and Native American three sisters – squash, beans and corn – are not only one of the best examples of companion planting (see my previous post), but also make an amazing nutritional bundle; carbs, fibre, vitamins and the powerful protein complementation of the grain/legume combo are all amongst the many strengths of these three gifts from Nature.  In Mexico, zucchini are used in many recipes, from ritzy stuffed baby zucchini, to simply stewing them in tomato sauce; the latter is not only a popular way to cook zucchini, but when its sisters are added – in the form of green beans and corn kernels – the dish becomes a complete meal.

Green Beans in Creamy Chipotle Sauce

In my garden, my Scarlet Red runner beans are blooming (photo below, left), and my heirloom Calypso already have a few pods (photo below, right):

At my local supermarkets, large bags of fresh green beans are available right now, so I got one. Green beans are better the sooner they are processed, so I washed them, trimmed the ends and sliced them into one-inch long sections.  Since it was far too much to use at once, I added them to a pot of boiling water (photo below, left) and let them cook, at high heat to keep them rolling (photo below, right):

After a few minutes, when the beans had turned a bright tone of green, I removed them from the heat, rinsed them in cold water and let them drain in a colander:

Recipe Tuna belly cutlets – Yellow Zafferano recipe

Not sure if it’s difficult to get Tuna Belly, but I see that it’s well known enough that there must be some way to finally find it in a fish store. It’s a very tender fish anyway. (My gourmet past allows me to say this on behalf of there having been other people interested in the purveyorship of precious goods like this. But I myself, haven’t seen it in the ordinary fish section of the store. I would guess that a regular fishmonger shop would be able to find it and order it.)

I am going to be posting lots of foods you can use for football parties or for a hearty appetizer dinner. As I have said before my family loves these little Hawaiian rolls sandwiches, if you don’t like the sweetness of the rolls you can always substitute a nice package of heat and serve dinner rolls. I am continually looking for new combinations of meats, cheeses, and toppings to try.

These are very filling and would make something a bit different for a main dish rather than pulled pork sandwiches or chili. Maybe a nice hearty chicken soup would complement these sandwiches.

Yes, more sliders. I love these little sandwiches during this busy time of year. I keep a package of rolls on hand to feed my kids friends, have a quick dinner on nights I don’t want to cook (add a hearty salad – believe me it works), or to serve on those football game days.

You can make them so many different ways there is no getting sick of them!

Verdict:

These were a super hit. You don’t need to add the onions but they add so much flavor to the sandwiches. The sandwiches were okay without the onions but they were REALLY good with the onions.

Serve these with a hearty green salad and you have dinner ready in no time!

Oven Roasted Corned Beef

We love Corned Beef.  For us it is not just for Saint Patrick’s Day.  I usually buy 2 or 3 during March when they are on sale and freeze them to use later in the year.

Saturday night I pulled one out to roast.  I wanted to try making Reuben Egg Rolls and I found an interesting recipe for Corned Beef Tacos.  I usually cook my Corned Beef in the slow cooker but it was 7 pm and I didn’t want to be up all night waiting for the meat to cook.  So, I gave oven roasting a try.
