I wonder if there’s any future in a bakery/cookie shop that only sells moon pie cookies, whoopie pies and all kinds of brownies? And parfait. Like Donkey of Shrek, I love parfait. I will bet that many people dream of just this kind of a bakery, un-encumbered by other concerns like sensible breads and sensible cookies and sensible desserts and important cakes and delicious petite-fours, but only focusing on things which matter — the big sell of large kitchen cookies and the brownies that deserve their attention! Tired of rice bowls and lunch salads? – Here is a recipe for a refreshing lentil bowl. colorful lentils and lots of fresh vegetables make up a colorful and tasty dish with a lot of crunch to it!
Feel free to choose whichever topping you like. I opted for some slow-roasted chicken breast which I had rubbed with a hot peri peri spice mix for some extra flavor kick, as well as for some sun-dried tomato and dried mango slices. A few piece of fresh salmon are great as well with this dish.
For a fully vegetarian dish, I suggest replacing the chicken with fried halloumi, or with fried tofu for a vegan dish. Consider sprinkling with some chopped chili or curry cashew nuts for an extra of flavor kick.

Maldivian Style Spicy Tuna Tacos
This is my favourite way of making tuna tacos. We love our tuna and rotis. The rotis are freshly made but you can use store bought tortillas too. The tuna is tossed in a smoky seasoning mix. The dry roasted chillies adds a smoky flavourto the spice mix. However if you don’t have time to roast and grind the dry chillies, then use smoked paprika or crushed chilli flakes. The spinach salad adds a freshness to the tacos, while the roasted tomato and chilli salsa will lift the flavours of the taco and give it a bit of a bite and smokiness. If you like it spicier then use the whole habanero chilli or for a milder version add less. Serve with slices of creamy avocado, fresh coriander leaves and fresh lime slices.

Cheesy Spinach Rotis, with Chilli Oil
These cheesy spinach rotis are perfect for brunch or even as an afternoon snack. You can use silverbeet (Swiss Chard) or any greens you prefer. The chilli oil goes well with the rotis. Store the leftover chilli oil in a bottle. The chilli oil is my favourite dip to serve with almost anything. But if you are not a chilli fan, then just enjoy the rotis without it. It’s delicious on its own or serve with some store bought hummus.

Broccoli and Mushrooms are probably 2 of the tastiest vegetarian options out there. As a meat lover, there are few vegetables that can take the place of meat. These two fit the bill and when paired with juicy tomatoes for that tangy flavor, it becomes a beautiful dish, one I would maybe even choose over a meat based dish. So, like most of us, I wanted to eat more veg based dishes. Don’t get me wrong, I eat a lot of raw veggies like carrots, cucumbers and lettuce, but there’s always a protein with it which leans towards the non vegetarian aspect of food. Beef is really big here, in the United States. The consumption of red meat keeps on increasing year after year. Beef short ribs are the equivalent of pork spare ribs. They come generally from the chuck part of the animal. Slow cooked beef is one of the most tastiest things to eat, be it any cut of meat. The hickory smoked barbecue sauce is a great flavor addition to the beef and enhances the taste. The sliced onions give it a bit of sweetness to it. Add in the mushrooms, and you have a great dish!
