I had one frozen brisket left from my St. Patrick’s Day stock up. They are perfect for this time of year because you can throw them in the slow cooker and let them cook without heating up your home. We made the brisket and decided we wanted Reubens with the brisket. The recipe that follows has no amounts because it is all up to you! Like more Swiss throw an extra slice or two on. Like more meat throw a couple extra slices on the sandwich. It is all up to you.

Don’t have a brisket to cook? Go to the deli and get sliced corned beef. It is hard to find for us this time of year as we live in a tiny town but most places have corned beef year round.

It’s time for another chicken and rice post! The previous Chicken and Rice post was was shown so much love and appreciation, that I decided to make this a series with the 2 main ingredients- rice and chicken being prepared with different ingredients and flavors. In this particular recipe, the rice has a bit of flavor of it’s own and compliments the chicken beautifully. This dish has it all, the chicken with the protein, the rice with the carbs and the veggies with the turnip leaves and baby tomatoes and of course, tons of flavor. As most of my dishes, this one is an easy recipe as well with a cooking of time of less than an hour. Perfect for lunch or dinner, this one should keep you full till the next meal.

Pork Souvlaki with Tzatziki Ronit PensoSouvlaki is a Greek dish, made of marinated small pieces meat, grilled on skewers. However, as you can see here, it is also possible to prepare the dish using a grilling pan, without the skewers.
Though not part of the traditional herbs used in this dish, to compensate for the lack of smoky aroma in indoor grilling, I have added some roughly chopped rosemary to the dish. It burns when grilling and adds lots of aroma and flavor. If you want a more authentic dish, omit it.

Summer is struggling.  There are rumours that it will make a break for it later this week and hit 30 degrees.  But today is ‘muggy’ (try saying that with a Brummie accent, the Sicilian finds it comedy gold), windy, cloudy.  A good day to dry your washing, but definitely not a day that could pass for Mediterranean.  That said, it is good enough to eat outside.  Later we are cooking rabbit, marinated in herbs, wine and oil for six hours before the barbecue. But lunch is simpler, as little cooking as possible.  I leave him to it whilst I take the spaniels out.  

Although it’s nearly August, the allotment tomatoes are slow this year, still green and embryonic but the basil is going great guns.  So this is a mix of bought (tomatoes, almonds, parmesan, olive oil) and homegrown (albeit a small…

24-Hour Layered Salad

1 head lettuce, torn in pieces
1 c. celery, sliced
1/2 c. red onions, sliced
1/2 c. sliced green peppers
1 pkg. frozen peas (thawed, uncooked)
1 can waterchestnuts, sliced
3 hard-boiled eggs, sliced

10 slices of bacon, cooked and crumbled
1 c. shredded cheddar cheese ( We like Tex-Mex blend shredded cheese.)

Layer the first 7 ingredients in order listed above.

Mix and spread over salad:
1/2 c. mayonnaise
1/2 c. sour cream
3 tbs. sugar

Top with cheese and bacon.  Cover and refrigerate for 24 hours.

EASY MUSHROOM AND THYME FOCACCIA

When it comes to baking bread, focaccia is not only one of the tastiest but also one of the simplest varieties to make at home. Have a go at making this lovely focaccia to enjoy with family, topped with mushrooms, fresh thyme and some sundried tomatoes. This bread can be enjoyed on its own, with a number of dishes or when you when you need a fancy carb fix.

Ingredients

  • 500g strong white bread flour
  • 30ml water
  • 2 packets of dried yeast
  • 1 heaped tsp salt.
  • 2 tbsp olive oil (extra for drizzling)

For the topping:

  • 200g mushrooms (sliced)
  • 1 handful of fresh thyme (hard stalks removed and finely sliced)
  • Zest of 1 lemon
  • 1 handful of sundried tomatoes (sliced)
  • Salt and pepper to taste

Perfect Medium Rare Oven Roasted Prime Rib > Call Me PMc

Wow! This entire page is perfect for the entree plates and possible sides and possible alternatives. Well, I have been looking for a couple of years for the perfect large reception party menu and I can never get it together. I like everything on this page and the cake below. Kind of an odd event to stumble upon a blog that way. (I would contact the blogger, but I’m kind of shy.) When we get close to the actual day, I will check back with my spouse to be…. (Everyone’s wondering now if it’s true…. Yes, I know him.)

I’m just having a good time; but I wouldn’t know how to prove it except from years on this topic on my Facebook page. It’s really uncanny. For no reason and no longer even thinking to look out for plans, I just found a few things that could work out for me (and us). I found all the other parts — ready for sometime whenever that is. But no reception food. Okay!

Now I’ve said too much. I will never speak of this again.
