Tahini Dressed Veggies

It’s time for another vegetarian dish! I, usually eat a balanced meal, so even though many of my posts are of meat, chicken or fish, I do eat a lot of raw vegetables with it to balance it out. With this dish, however, it is a medley of vegetables and spices served with the soft Iraqi samoon or flatbread (can use pita bread as well) and some tahini sauce (grounded sesame paste). Tahini usually goes great with meat and chicken and of course, Hummus! I have been eating tahini since I was a kid. When hummus was not an option, I used to mix tahini and mayo and eat it with everything. This was probably one of the few times I paired tahini with only vegetables and I wasn’t disappointed. Flourless Coconut, Peanut Butter and Banana Cookies, Ronit PensoThese tasty and chewy cookies started with a minor disappointment: I’ve tried one of the popular recipes for flourless peanut butter cookies (the ones that contain only peanut butter, sugar (or sweetener) and an egg), and the result was not as exciting for me as it was for a lot of the online reviewers. I thought the cookies were on the boring side taste-wise, and found their texture too crumbly to handle.
However, by then I was already in “flourless peanut butter recipe” mood, so I started to add “this and that” to the original recipe. The cookies here are the result of that process.
They are tasty on their own right, but the chocolate drizzle adds another layer of flavor, which goes so well with all the ingredients.
