Low Carb Raspberry Cheesecake Cookies

Recently I stumbled upon this recipe from Maya @ Wholesomeyum.com.  Since I like raspberries a lot, I gave Maya’s recipe a go and I wasn’t disappointed at all.

This recipe involved several steps, but in general, the process of making these cookies was not too difficult, if you have the tools to help you.  I supposed you could do all these by hand, but it would just take a bit longer.

The ingredients were quite simple as well: almond flour, Swerve Sweetener, both granular and confectioners, an egg, vanilla, raspberry, cream cheese and butter.

The first step would be making the Raspberry filing.  I was debating whether I wanted to use my immersion blender to do this, but then I remembered that I own a mini food processor.  So I dug out my mini food processor and utilized it for these cookies.
