Cinnamon Roll-up Cookies

Makes about 4 dozen

INGREDIENTS

  • Dough
    • ½ Cup Cream Cheese, softened
    • ½ Cup Butter, softened
    • ¼ Cup Vegetable Oil
    • ¾ Cup Granulated Sugar
    • ½ Cup Powdered Sugar
    • 1 Lge. Egg + 1 Lge. Egg Yolk
    • 2 tsp. Vanilla
    • 3 Cups all purpose Flour
    • 1 tsp. Salt
    • ½ tsp. Baking Soda
    • 3 tsp. Baking Powder
  • Filling
    • ½ Cup Butter, divided
    • 4 tsp. Cinnamon, divided
    • 1 Cup Brown Sugar, packed, divided

DIRECTIONS

Preheat oven to 350°F. Sift together flour, salt, baking soda, and baking powder, set aside. Beat together butter, cream cheese, oil, and sugars until smooth and creamy. Add eggs and vanilla, mix well. Add dry ingredients and mix just until well combined. Divide into two, wrap in plastic wrap, and chill for at least 1 hour.
