CHICKEN PICCATA ROLLED IN GARLIC – HERB BREADCRUMBS – TOPPED WITH LEMON SLICES – IN A SAUCE OF CHOPPED FRESH PARSLEY – BONE BROTH – WHITE WINE

THE MEDITERRANEAN MICROWAVE

Note:  Originally intended for veal, this recipe works equally well for chicken.

For 4:

–6 chicken tenderloins

–lemon (fresh, sliced cold)

–garlic – herb breadcrumbs (one-third cup, boxed)

–parsley (fresh, 1 handful, chopped)

–bone broth (chicken, low sodium, non-fat, one-eighth cup)

–white wine (one-eighth cup, use the real wine rather than cooking wine)

–salt and pepper

–extra virgin olive oil

1 – Place the parsley, bone broth, and white wine in a covered baking dish.  Season with salt, pepper, and olive oil.  Microwave on high for 3 minutes.

2 – Place the chicken in a plastic bag.  Add half a dozen drops of olive oil.  Pour in one-third cup of garlic – herb breadcrumbs.  Shake well.  Then add chicken to the sauce, being careful to separate the tenderloins.  Spoon sauce over the top.  Season with salt, pepper, and olive oil.  With a very sharp knife, slice a chilled fresh lemon. …

Savory Rice

Back in th 1970’s I went to work for the Gas Company. I was a teller at the time and once a month the company printed off a free recipe card that we passed out to our customers. This Savory Rice recipe was one of those recipes that I adapted to my own taste. It is absolutely fantastic and easy to make even for beginner cook!

Ingredients

Melt the butter in a medium

pan over medium heat.

Add chopped onions, garlic and rice.

Mix and cook over medium heat until

lightly brown, stirring constantly.

Add chicken broth and seasonings.

Bring to a boil stirring occasionally.

Pour rice into a 2 quart

casserole dish with a lid.

Bake in a preheated 350 degree oven

for 50-55 minutes until the liquid

is absorbed but not dry. I baked

this 50 minutes. Stir before serving.

Who doesn’t like Fried Chicken? It’s a guilty pleasure that when seasoned and made well, is a plate full of joy and happiness. I love fried chicken and while it’s not the best food in terms of health and nutrition, it more than makes up for in taste and flavor. The crispy skin on the outside and the juicy, tender and succulent chicken inside make it a favorite among all people of different race, age or cultures. The story of the origin of fried chicken is pretty fascinating on how it’s transitioned into ‘soul food’ and I learnt most of it from the ‘Fried Chicken’ episode in ‘Ugly Delicious’ (on Netflix). Pan Fried Chicken Liver

There are mixed responses when you ask someone if they like chicken liver or not. Some of them have not tried it, others can’t stand it and many love it. I belong to the latter category of people who love it. The first time I had chicken liver, was when a family member was unwell and the doctor recommended to eat chicken liver among other foods, probably for the high iron and vitamin content I guess. Anyways, since then, I always look for the liver part in a chicken curry or in an all chicken parts fry. Also, my dad used to make an amazing liver dish with sauteed onions and green chilies paired with Indian spices and flavors which is mouthwatering and a treat for dinner.
